How to manufacture cold-pressed juice

Cold pressed describes extraction. It does not mean HPP. A manufacturer must pair the juice with a validated food-safety process, compatible packaging, and the right storage plan. Juice processors subject to Juice HACCP must achieve at least a 5-log reduction in the pertinent microorganism. High pressure, heat, and UV are possible controls when validated for the product.
